It is Friday! You all are lucky this week, because I'm sharing my second "Cocktail in the Spotlight" of this week. I decided to share a cocktail my boyfriend loves since this is a big weekend for him! I'll share a little background about my boyfriend:
Ian loves to have a good time, but whenever we got out he usually sticks to beer. 
Whenever he's on a sailing vacation however, he likes to have a good dark n stormy. 
(he also mixes it up here and there too!) 
So in his honor, I'm sharing a dark n stormy recipe with a twist! 
Pitcher full of Dark n Stormy 
Ingredient: 
2 cups of Dark Rum
3 cups of Ginger Beer
5 Limes
Vanilla or Vanilla Bean Paste
Directions: 
1. Combine the 2 cups of Dark Rum and 3 cups of Ginger Beer in an ice-free pitcher 
2. Add in the juice from 4 limes
3. Add a teaspoon of Vanilla Extract (or vanilla bean paste if you want a more rich flavor) 
4. Stir up and Serve over Ice
5. Cut up the 5th Lime and garnish the glasses with a little wedge of Lime. 
By combining the drink in an ice-free pitcher, you aren't loosing any of that flavor right away. And by making this in a pitcher version, you have enough to serve 8 people or 2 very thirsty ones!

Tomorrow is the big ashore party at Navy Pier. I am so excited to be attending a party in the city (haven't done much in the city since I've been here) and to be wishing all my luck as Ian departs for the race. No I haven't decided what I'm wearing yet, think I will wait to surprise you! 
Tonight, Ian and I are hitting the town. A party at the yacht club, followed by dinner and drinks in Chicago City at some of our favorite places.
