Sun Rays for Days


Hi Gorgeous!!!! 

Ah, I know some of y'all are getting frustrated with me! Like I mentioned in my last post, I am in Florida! I went to make a post on Friday but completely passed out after traveling during the day. Don't worry: I'm sharing a Sunday "happy hour" drink since I missed the ball on posting one Friday!

Today's cocktail in the spotlight is one with "fun in the sun" in mind. . What drink sounds more refreshing on a hot summer day than one with lemons involved? Any one who knows me knows I enjoy a good gin drink here and there when I'm not feeling like my usual (rum&diet).  I found a drink on Pinterest that involves limoncello and gin, knowing instantly I needed to try it!

Limoncello Gin Cocktail 
1. In a shaker, crush two sprigs of fresh thyme into the bottom with 1 tablespoon of fresh lime juice.
2. Add 3 tablespoons of good gin (I always use Blue Sapphire)
3. Add 2 tablespoons of limoncello (link below for recipe)
4. Add a handful of ice and shake away baby!
5. Strain over a glass with ice and garnish with a thyme sprig
6. Enjoy!

I am loving Florida! The weather is so nice and the sun seems to be always shining! We got a few rain storms here and there but since we are on an island, the storms blow over quickly. The other night we were able to go out to eat at one of our favorite restaurants before the rest of our crowd gets in. I had a blackened grouper for dinner, my mom opted for the fried grouper and my sister was feeling like something sweet so she ordered coconut shrimp. The food was so good (as usual!) and our favorite waitresses were still there. We've been coming to this island since my sister and I were babies! So needless to say, we've come to know some of the locals which makes the trip down here more fun. Of course, after dinner was done our waitress comes over to ask the dreadful question : dessert? The option was handmade key-lime pie, which we all love dearly so there no passing it up!

Doesn't that look amazing?! I may need to go get myself another piece now. In other key lime news, have y'all heard of key lime ice cream? I hadn't until we stopped at a local ice cream shop having that as one of the flavors. I decided to give it a try, being the key lime lover I am, and boy am I glad I tried it! 
It was so refreshing and cold! I have you craving an ice cream cone now, don't I?! 
In the fashion world, have any of you gotten a pair of Birkenstock sandals? They seem to be blowing up the sandal world. I fell in love with these white thong Birkenstock sandals snd knew I had to purchase them when I saw them in one of the catalogs that comes to my house. They are so comfy and look so cute with jeans rolled up or a sun dress. If you are thinking of getting a pair, get on it because they are selling out fast!
