Happy Father's day to all of those good old dads in my life. Those include: my grandpa. my dad, Ian's Dad, Ian's step-grandpa, and all of my uncles who are dads as well! With my being in Chicago for the time being, I wasn't able to spend time with any of these folks but I hope they are having a very relaxing and fun Sunday.
Carol, Gail, and I are hosting a first day of summer BBQ party! Gail is cutting the grass now so we can put up the badminton set. We are making good old sloppy ribs (a can of beer added to the bottom of the pans), beans, and guacamole. My homemade guacamole is so good and it's my own recipe! (I don't use that packaged seasoning or the store bought stuff).
Bitchin' Guacamole
4 ripe avocados
1/2 teaspoon of minced garlic
1&1/2 teaspoon of Cayenne Pepper
1&1/2 teaspoon of Chili Powder
Sprinkle or Two of Red Pepper Flakes (I add in a lot because I like the heat!)
1/4 of a freshly chopped jalapeño
Sea Salt
Ground Black Pepper (do it yourself, it's better!) 
Handful of Fresh chopped cilantro
Juice of 1 lime. 
Salsa (homemade or buy a container of freshly made)
1. First smash up those avocados to your liking. Some like it chunkier, some like it creamier. Little ripening trick I learned from my boyfriend's step-grandma: Save the Avocado Seed for storing. 
2. Add in spices, garlic, jalapeño, and cilantro then stir until fully mixed.
3. Throw in some sea salt and black pepper (again to your liking) and stir. 
4. Squeeze in the lime juice and stir. 
5. If serving right away, add in about 1/4 cup of salsa if you like tomatoes. I like adding in salsa because it gives it that extra flavoring with the onions. 
6. Put seed in the serving dish and pile in the amazing guacamole you just made. 
7. Enjoy! 
I may be a little off on my seasonings, so if you like it spicier or more mild, adjust to your liking. Today we are having 11 people over (including ourselves) so I used 6 avocados. The way you tell how many avocados to smash is based on how big your party is. Each guest is likely to eat half of an avocado's worth of guacamole. 
I also am lucky enough that my aunts are really into growing their own vegetables so majority of the ingredients I used, I also was able to hand pick :) 
For you fashionistas, today doesn't only mark first day of summer and father's day, but it also marks national "Wear your Lilly" day.
